ABSTRACT

ABSTRACT Despite its rarity, symptomatic micronutrient deficiency remains a public health problem. Scurvy is the differential diagnosis for bleeding disorders and hematological and rheumatological diseases, especially in patients with eating disorders. However, it is unrelated to autism spectrum disorders or other neurodevelopmental disorders. A previously healthy 10-year-old boy living in São Paulo, Brazil, had a history of significant food selectivity unrelated to autism spectrum disorder, resulting in symptomatic ascorbic acid deficiency (scurvy). This resulted in pain and purpuric lesions on the lower limbs, gingival edema, bleeding during tooth brushing, asthenia, weakness, malaise, and sadness. Therefore, dietary anamnesis is important for routine monitoring of child growth and development. This process helps prevent nutritional deficiencies, facilitates early diagnosis of eating disorders, and enables multidisciplinary follow-up for these patients.

Resumo Introdução Instrumentos que busquem conhecer os motivos que propiciam as escolhas alimentares em adolescentes são inexistentes no Brasil até o momento. O Food Choice Questionnaire (FCQ) para adolescentes é um questionário de fácil aplicação e que pode ser utilizado não somente em pesquisas, mas também nos serviços de atenção à saúde. Objetivo Descrever as etapas iniciais - validade de face e de conteúdo - do processo de tradução e adaptação transcultural do FCQ para adolescentes da versão em espanhol para o português do Brasil. Método Trata-se de um estudo metodológico de tradução e adaptação transcultural, em conformidade com as normas internacionais para tradução de instrumentos para validação. Foram seguidas quatro etapas: tradução, retradução, avaliação por comitê de especialistas e dois pré-testes, que foram realizados com adolescentes com idades entre 14 e 19 anos. Resultados Os itens e o título do instrumento foram traduzidos para o português. Alguns itens necessitaram de ajustes para melhor compreensão do público-alvo. O tempo médio de aplicação foi de sete minutos. Um item foi eliminado do questionário e modificou-se a escala de resposta para melhor adequação do instrumento. Conclusão O processo inicial de tradução e adaptação transcultural do Questionário de Escolhas Alimentares para Adolescentes Brasileiros (FCQ-A-BR) atestou as validades de face e conteúdo. No entanto, faz-se necessária a complementação das análises psicométricas, para utilização do instrumento, caso elas se mostrem satisfatórias.


Abstract Background Instruments that seek to find out the reasons that lead to food choices among adolescents are not yet available in Brazil so far. The Food Choice Questionnaire (FCQ) for adolescents is a simple questionnaire that can be used not only in research, but also in healthcare. Objective To describe the initial steps - face and content validity - of the process of translation and cross-cultural adaptation of the FCQ for adolescents from the Spanish version into Brazilian Portuguese. Method This is a methodological study of translation and cross-cultural adaptation, in accordance with international standards for translation of instruments for validation. Four steps were followed: translation, back-translation, evaluation by an expert committee and two pre-tests, which were carried out with adolescents aged between 14 and 19 years. Results The items and the instrument title were translated to Portuguese. Some items needed adjustments to better understand the target audience. The average application time was seven minutes. One item was eliminated from the questionnaire and the response scale was modified to better suit the instrument. Conclusion The initial process of translation and cross-cultural adaptation of the Food Choice Questionnaire for Brazilian Adolescents (FCQ-A-BR) attested to the face and content validity. However, it is necessary to complement the psychometric analyses, to use the instrument, if they are satisfactory.

Introducción: El conocimiento obtenido a partir de las experiencias de los pacientes favorece una atención de calidad. El objetivo de este estudio cualitativo es conocer la percepción de los pacientes sobre su realimentación tras una cirugía colorrectal, y los factores condicionantes en relación con dicho proceso. Material y Método: En base a la directriz de Standards for Reporting Qualitative Research, se realiza un estudio cualitativo a partir de una entrevista de 8 preguntas de término abierto realizada a 20 pacientes seleccionados por un método de variación máxima de muestreo. Se realizó análisis temático. Resultados: Se identificaron cuatro dimensiones principales (con subtemas respectivos) que condicionan la alimentación en el postoperatorio: 1. propósitos del paciente tras la alimentación (búsqueda de alta, hidratación, búsqueda de salud, finalizar ayuno, deambulación); 2. propiedades y características de los alimentos (sazón, presentación, temperatura, porciones, consistencia, favoritos); 3. factores del paciente (físicos, psicológicos); y 4. relación equipo de salud-paciente (confianza, complacencia, información, agradecimiento). Conclusión: El proceso de ingesta de alimentos en este contexto está condicionado por las cuatro dimensiones mencionadas. Sería importante considerarlas al momento de crear y ejecutar pautas y guías de alimentación adaptadas a los pacientes.


Introduction: Knowledge obtained from the experiences of patients favors quality care. The aim of this study is to know the perception of patients regarding refeeding after colorectal surgery, and particular factors that condition postoperative intake from their perspective. Materials and Method: Based on the guideline of Standards for reporting qualitative Research, a qualitative study was constructed from an interview with 8 open-ended questions to 20 patients selected by a maximum sampling variation method. Thematic analysis was carried out. Results: Four main dimensions were identified that determine feeding in the postoperative period: 1. patient's goals after feeding (search for discharge, hydration, search for health, end fasting, ambulation); 2. properties and characteristics of food (seasoning, presentation, temperature, portions, consistency, favorites); 3 patient factors (physical, psychological); and 4. health team-patient relationship (trust, complacency, information, gratitude). Conclusion: The process of food intake in this context is conditioned by the four dimensions mentioned. It would be important to consider them when creating and executing feeding guidelines adapted to patients.

Introducción: El refrigerio escolar es un reflejo de los hábitos y preferencias alimentarias de los niños. Un refrigerio no saludable es considerado como un problema de salud pública. Objetivo: Identificar los tipos de alimentos que contienen los refrigerios del preescolar de instituciones educativas públicas. Métodos: Se realizó un estudio descriptivo, transversal con una muestra de 167 refrigerios de niños preescolares de 4 instituciones educativas de la región norte de Perú; se aplicó como instrumento una lista de chequeo de alimentos energéticos, hídricos, reguladores y constructores, según su origen en procesados y no procesados (naturales). Los datos categóricos fueron registrados y presentados como frecuencias y porcentajes. Resultados: De los 668 alimentos observados, el 95,8 % presentaba alimentos energéticos seguido del 82,6 % de hídrico. Los alimentos de los refrigerios de los niños preescolares fueron un 45,2 % no procesado, seguido del 29,6 % que no tenía alimento de ningún tipo. Conclusiones: Existe un alto consumo de alimentos energéticos en preescolares de Chiclayo y hay similitud entre la frecuencia de los procesados y no procesados, sin embargo, en general los refrigerios tienen una alta presencia de alimentos no procesados.


Introduction: The school snacks reflect children's eating habits and preferences. An unhealthy snack is considered a public health problem. Objective: Identify the types of foods that contain the preschool snacks of public educational institutions. Methods: A descriptive, cross-sectional study was conducted with a sample of 167 snacks of preschool children from four educational institutions in the northern region of Peru, applying as an instrument a checklist of energy foods, water, regulators and builders, and according to their origin in processed and unprocessed (natural). Categorical data were recorded and presented as frequencies and percentages. Results: Of the 668 foods observed, 95.8 % presented energy foods followed by 82.6 % water. The foods of the preschool children's snacks were 45.2 % unprocessed followed by 29.6 % who had no food of any kind. Conclusions: There is high consumption of energy foods in preschools in Chiclayo and there is a similarity between the frequencies of processed and unprocessed, however, in general, snacks have a high presence of unprocessed foods.

RESUMEN Durante las últimas décadas la migración aumentó considerablemente en Chile generando preocupación por la salud de los migrantes. Respecto de la alimentación en escolares, la evidencia no es concluyente, por un lado, las preferencias alimentarias orientadas al territorio de acogida han sido asociadas a una menor calidad de la alimentación sumado a indicadores de malnutrición y por otro, escolares migrantes que presentaron menor riesgo de malnutrición por exceso. El objetivo de esta investigación fue comparar la calidad global de la alimentación y las preferencias alimentarias de escolares chilenos y migrantes residentes en Chile. Se realizó un estudio transversal de tipo descriptivo, el cual incluyó una muestra de 534 escolares migrantes y no migrantes, de ambos sexos, los cuales fueron seleccionados por conveniencia, completando un cuestionario sobre calidad de la alimentación y preferencias alimentarias. Se analizaron distribuciones de frecuencias mediante la prueba de Chi2 por grupos. Escolares migrantes reportaron una mejor calidad global de la alimentación que escolares chilenos (p= 0,002), con mejores indicadores. Respecto a la calidad global de la alimentación por tiempo de residencia, se observaron diferencias estadísticamente significativas (p= 0,025) en favor de aquellos migrantes con más de 5 años de residencia. La calidad global de la alimentación aumentó en migrantes cuando las preferencias alimentarias estuvieron orientadas al territorio de origen. En escolares chilenos la calidad global de la alimentación aumentó, cuando prefirieron alimentos que no son tradicionales de Chile. En conclusión, escolares migrantes reportaron una mayor calidad global de la alimentación que chilenos, y esta aumenta cuando el tiempo de residencia es de 5 o más años. Es necesario seguir indagando sobre la calidad global de la alimentación y las preferencias alimentarias en escolares migrantes.


ABSTRACT During the last decades, migration increased considerably in Chile, generating concern for the health of migrants. On the one hand, food preferences oriented to the host territory have been associated with lower food quality and indicators of malnutrition; on the other hand, migrant schoolchildren present a lower risk of excess malnutrition. The objective of this research was to compare the overall food quality and food preferences of Chilean and migrant schoolchildren residing in Chile. A descriptive cross-sectional study was carried out, which included a sample of 534 migrant and non-migrant schoolchildren, of both sexes, who were selected by convenience, completing a questionnaire on food quality and food preferences. Frequency distributions were analyzed using the chi-square test by groups. Migrant schoolchildren reported better overall food quality compared to Chilean schoolchildren (p= 0.002), with better indicators in the dimensions of healthy, unhealthy food, and meal times. We observed statistically significant differences in overall food quality by time of residence (p= 0.025) in favor of those migrants with more than 5 years of residence. It is noteworthy that the healthy category reached its highest proportion (41.4%) among those with five or more years of residence in Chile. The overall quality of food increased in migrants when food preferences were oriented to the territory of origin. In Chilean schoolchildren, overall food quality increased when they preferred foods not characteristic of Chile. In conclusion, migrant schoolchildren reported a higher overall food quality compared to Chilean schoolchildren, and this increased when the time of residence was 5 or more years. Further research is needed on the overall food quality and food preferences of migrant schoolchildren.

Resumen: Objetivo: El aislamiento social originado por el COVID-19 ha potenciado modificaciones en los estilos de vida, afectando el bienestar de las personas mayores. Es por esto que el objetivo del estudio es el interpretar las influencias de factores emocionales y socioeconómicos en las preferencias alimentarias de personas mayores en Gran Concepción, Chile, en tiempos de pandemia. Materiales y Métodos: Para el logro de los propósitos, se realizó una investigación que responde al paradigma cualitativo con enfoque fenomenológico interpretativo de Heidegger. Los participantes existieron seleccionados mediante un muestreo intencional en base a los criterios de selección y considerando como tamaño muestras el resultante del punto de saturación. El estudio incluyó a un total de 12 personas mayores, las que fueron entrevistadas de manera virtual; los datos resultantes, se codificaron, reagruparon y analizaron mediante técnica de análisis de contenido. Resultados: Los platillos preferidos responden a los propios de la cultura local; por otra parte, aspectos emocionales y económicos no son reconocidos en la selección de alimentos y preferencias alimentarias. La comunicación lograda por el uso de redes sociales con sus familias es identificada como positiva y no influye en sus conductas alimentarias. Conclusiones: Para este grupo de personas mayores, la vivencia de aislamiento social por COVID-19, no fue suficiente para modificar las preferencias alimentarias.


Abstract: Objective: The social isolation caused by COVID-19 has promoted changes in lifestyles, affecting the well-being of the elderly. Therefore, the objective of the study is to interpret the influence of emotional and socioeconomic factors in food preferences of older people of the Gran Concepcion, Chile, in times of pandemic. Materials and methods: For the achievement of its purposes, an investigation was carried out that responds to the qualitative paradigm with the interpretive phenomenological approach of Heidegger. Participants were selected by intentional sampling based on the selection criteria and considering the sample size resulting from the saturation point. The study included a total of 12 elderly, who were interviewed virtually; the resulting data was coded, regrouped and analyzed using a content analysis technique. Results: The favorite dishes respond to those of the local culture; on the other hand, emotional and economic aspects are not recognized in the selection of food and food preferences. The communication achieved using social networks with their families is identified as positive and does not influence their eating behaviors. Conclusions: For this group of older people, the experience of social isolation due to COVID-19 was not enough to modify food preferences.

Abstract: Objective: To identify the behavioral and normative believes factors that might have major influence on the decision to buy packaged foods in urban Mexican families. Materials and methods: We performed a cross-sectional study in four urban cities of Mexico. Participants responded a self-administered questionnaire (n=3 340) outside of randomly selected supermarkets. A factor analysis was performed to identify what were the main behavioral and normative believes explaining consumers' decision when buying packaged foods. Results: Three factors explained the behavioral beliefs: the quality assessment of packaged foods explained 61% of the variance, products that maintain weight explained 25%, and the emotional experience with foods explained 13%. Three factors explained the normative beliefs: expectations of children and partner explained 46% of the variance, expectations from the participants' closest friends 23%, and expectation from other family members explained 14%. Conclusion: Behavioral and normative beliefs related to assessing the quality of foods and meeting family expectations respectively are the main beliefs factors affecting consumers' packaged food purchase decisions in urban consumers.


Resumen: Objetivo: Identificar las creencias de comportamiento y normativas que tienen mayor influencia en las decisiones de familias urbanas en México para comprar alimentos empaquetados. Material y métodos: Se realizó un estudio transversal en cuatro ciudades urbanas de México. Los participantes respondieron un cuestionario auto-administrado (n=3 340) a la salida de los supermercados que fueron seleccionados aleatoriamente. Se realizó un análisis factorial para identificar los principales factores de las creencias de comportamiento y normativas que explican la decisión de comprar alimentos empaquetados. Resultados: Tres factores explicaron las creencias conductuales: la evaluación de la calidad de los alimentos empaquetados explicó el 61% de la varianza, productos para control de peso explicaron el 25% y la experiencia emocional con los alimentos el 13%. Tres factores explicaron las creencias normativas: las expectativas de la pareja e hijos explicaron el 46% de la varianza, las expectativas de amigos cercanos el 23% y las expectativas de otros familiares explicaron el 14%. Conclusión: En las creencias conductuales, la evaluación de la calidad de los alimentos y en las creencias normativas, la expectativa de la pareja y los hijos tienen gran influencia en la decisión de compra de alimentos empaquetados en los consumidores de los supermercados urbanos en México.

ABSTRACT Food desires are defined as motivations that drive the search for and consumption of food. However, when domains of intensity and urgency are activated, these desires can become intense (i.e. food craving), being then characterized by episodes or cognitive events loaded with affectivity, in which food is associated with obtaining pleasure or relief, which is the only attentional focus. Specificity and urgency mark the differentiation between food desires and cravings. The process of elaboration with vivid images, the retention in working memory, the emergence of a negative affect state (awareness of the lack), and a committed attentional focus to seek food are characterized as stages of an episode of food craving. Individuals with eating disorders have the lowest levels of food craving when it comes to anorexia nervosa and the subsequent increase to bulimia nervosa and binge eating disorder. Some environmental and cultural triggers and internal factors of cognition and emotions play a crucial role in the emergence of food craving episodes. The external factors include positive/negative events, food environment, advertisements, cultural beliefs about food, specific locations, and food itself. The internal factors comprise dietary restriction, food reward, impulsivity/inflexibility, emotions, thoughts and feelings about food, hunger/satiety/appetite, and anxious/depressive symptoms. Treatment involves the association of flexibility, awareness, and questioning strategies about dietary practices based on three principles: unconditional permission to eat, eating more for physical than emotional reasons, and tuning in with the body's signs of hunger and satiety (intuitive eating).

ABSTRACT Objective This study characterized the degree of processing of the food items available at home and the routine of shopping for food in families with children and/or teenagers and whose meals are usually prepared at home. Methods Mixed methods (interview, questionnaires, and food inventory). Interview's transcripts were submitted to thematic analysis and the foods identified in the inventory were classified according to the degree of processing and analyzed for their availability and access in the home food environment. Results Results revealed the high availability of ultra-processed foods; that the supermarket was the main source of food acquisition; and that purchasing food is part of an organized routine where time and control of expenses are the most valued aspects. Conclusion Actions which focus on planning and executing the acquisition of unprocessed and minimally processed foods are needed to promote greater availability and increased intake of such foods, so that the composition of homemade meals may be in line with what is recommended by the national dietary guidelines.


RESUMO Objetivo O presente estudo caracterizou o grau de processamento dos alimentos disponíveis e a rotina de compra de alimentos de famílias com crianças e/ou adolescentes e que costumam preparar refeições em casa. Métodos Métodos mistos (entrevista, questionário e inventário de alimentos). As transcrições das entrevistas foram submetidas à análise temática e os alimentos identificados no inventário foram classificados segundo o grau de processamento e analisados quanto à disponibilidade e acessibilidade no ambiente alimentar domiciliar. Resultados Os resultados revelaram que a disponibilidade de alimentos ultraprocessados foi alta; que o supermercado foi o principal local de aquisição de alimentos e que a compra de alimentos faz parte de uma rotina previamente organizada em que o tempo e o controle de gastos são os aspectos mais valorizados. Conclusão Ações focadas no planejamento e execução da compra de alimentos in natura e minimamente processados são necessárias para promover maior disponibilidade domiciliar e, consequentemente, o consumo de alimentos in natura e minimamente processados, aproximando as refeições realizadas em casa do que é preconizado pelo Guia Alimentar para a População Brasileira.

RESUMEN Una nutrición adecuada es fundamental para el crecimiento y desarrollo óptimo de la infancia. En Chile, el Programa de Alimentación Escolar tiene como propósito disminuir la brecha asociada con el acceso a la cantidad y calidad de los alimentos en la población de estudiantes vulnerables. El objetivo de este estudio fue determinar el grado de aceptabilidad de los almuerzos que el Programa ofrece a los estudiantes y sus pérdidas económicas asociadas. Se realizó un estudio descriptivo transversal en 528 estudiantes primarios y secundarios de 5 colegios públicos de la comuna de Coquimbo, quienes evaluaron 6 almuerzos mediante la escala sensorial hedónica de 9 puntos, encuesta de características organolépticas, test de ordenación y determinación de porcentaje de ingesta para establecer pérdidas económicas. Se realizó muestreo probabilístico estratificado, ANOVA para análisis de la escala hedónica y porcentaje de ingesta, tablas de contingencia, Chi cuadrado para características organolépticas (p<0,05). Se encontró que la carne de res con fideos tuvo la mayor preferencia y las más bajas aceptaciones fueron frijoles con fideos y pastel de pescado con puré de papas (p<0,05). Las preparaciones con menor aceptabilidad representaron el 82,2% de las pérdidas económicas, principalmente frijoles. Los resultados confirman una baja ingesta de pescado y verduras, que las características de sabor por bajo contenido de sal afectan las preferencias y que existe una relación directa entre la ingesta y la pérdida económica.


ABSTRACT Adequate nutrition is a fundamental factor for optimal early childhood growth and development. In Chile, the School Nutritional Program aims to diminish the gap associated with access to the quantity and quality of food. The objective of this study was to determine the degree of acceptability of prepared lunches that are given to students by the School Nutritional Program and its association with economic losses. A descriptive cross-sectional study was carried out among 528 primary and secondary students from 5 public schools in the Coquimbo commune, who evaluated 6 lunches using the 9-point hedonic sensory scale, a survey of organoleptic characteristics, a ranking test and determination of the intake percentage to establish economic losses. Stratified probability sampling was performed, ANOVA for analysis of the hedonic scale and percentage of intake, contingency tables, Chi square tests were used for organoleptic characteristics (p<0.05). The thin sliced beef with noodles was found to have the highest preference and the lowest ranked meals were beans with noodles and fish cake with mashed potatoes (p<0.05). Preparations with lower acceptability represented 82.2% of economic losses and were mainly beans. The results confirm a low intake of fish and vegetables, that taste characteristics due to low salt content affect preferences and that there was a direct relationship between intake and economic loss.

RESUMEN En el actual contexto de transición nutricional es necesario explorar los factores que afectan la elección de alimentos en la población peruana, por ello el objetivo del estudio fue validar el instrumento Food Choice Questionnaire (FCQ) en Lima Metropolitana. Se realizó un estudio de corte transversal para validar el instrumento FCQ diseñado por Steptoe. Se desarrollaron 4 etapas: revisión del FCQ y adecuación al español, validación semántica y de contenido con expertos, validación de constructo utilizando el análisis factorial de componentes principales y análisis de fiabilidad con el Alfa de Cronbach. Los resultados de la validez semántica y de contenido permitieron obtener un instrumento modificado agregándose el factor "Entorno social". En la validación de constructo se realizó un análisis factorial y luego de 4 iteraciones se depuraron 7 ítems resultando un instrumento con 10 factores y 36 ítems, que respondían al 62,6% de la varianza; posteriormente con los resultados del análisis de fiabilidad, el cuestionario FCQ se redujo a 8 factores y 32 ítems. En conclusión, se obtuvo una versión validada del cuestionario FCQ para ser utilizado en población de 18 a 29 años de la capital del Perú. El cuestionario validado consta de 8 factores incluyéndose el "Entorno social". Son necesarios otros estudios en diferentes regiones y grupos poblacionales para recoger nuevos factores que influyen en la elección de alimentos.


ABSTRACT In the current nutrition transition context, the exploration of associated factors with food choices in the Peruvian population is necessary; therefore the study's objective was to validate the Food Choice Questionnaire (FCQ) in Metropolitan Lima. A cross-sectional design was conducted to validate the FCQ instrument designed by Steptoe. It was developed in 4 stages: FCQ's review and adaptation to Spanish, semantic and content validation with experts, construct validity using factorial analysis of principal components, and reliability analysis using Cronbach's Alpha. The results of the semantic and content validity produced a modified instrument with one "social environment" factor and 6 more items. For construct validity, a factorial analysis was performed and after 4 iterations, 7 items were removed, resulting an instrument with 10 factors and 36 items, which explained 62.6% of the variance. Finally, with the results of the reliability analysis, the FCQ questionnaire was reduced to 8 factors and 32 items. In conclusion, a validated version of the FCQ questionnaire was obtained to be used in 18 to 29 years old population of the capital city of Peru. The questionnaire validated consists of 8 factors including the "social environment". Other studies in different regions and population groups are necessary to collect new factors that influence food choices.

Introducción: Los hábitos alimentarios se modifican en la adolescencia por diferentes factores que se relacionan estrechamente con los cambios propios de esta etapa. Objetivo: Examinar las preferencias y conducta alimentaria de adolescentes de secundaria básica. Métodos: Estudio transversal en la escuela secundaria básica "José Martí", municipio Cerro, La Habana, entre septiembre-octubre de 2015 en 94 adolescentes. A todos se les aplicó una encuesta sobre la frecuencia de las principales comidas, así como el consumo semanal de alimentos. Se empleó la prueba Ji-cuadrada para establecer las asociaciones entre variables. Resultados: Predominaron las hembras (55,0 por ciento) con una media de edad de 12,7±0,9 años. La mayoría no cumplen con la frecuencia recomendada de las comidas y su dieta está basada en alimentos con alto contenido de grasas y azucares, alta en sodio y baja en vitaminas, fibras y minerales. Las hembras son las que menos desayunan (32,0 por ciento), los varones los que menos almuerzan (11,4 por ciento) y la cena es la comida que más respetan ambos sexos (98,0 y 97,7 por ciento, respectivamente). Los cereales (64,0 por ciento), azúcares (58,0 por ciento) y lácteos (56,0 por ciento) están dentro de los alimentos más consumidos. El huevo, los embutidos y las carnes rojas son más consumido por los varones y las carnes blancas por las hembras. Conclusiones: La conducta alimentaria de los adolescentes es inadecuada en su mayoría con mayor afectación en el sexo femenino en el desayuno y en el masculino en el almuerzo. Tienen baja preferencia por los vegetales y las frutas en contraste con los cereales, azúcares y lácteos, más consumidos(AU)


Introduction: Eating habits are modified in adolescence by different factors that are closely related to the typical changes of this stage of life. Objective: Examine the food preferences and behavior of basic junior high school´s adolescents. Methods: Cross-sectional study in "José Martí" Basic Junior High School, Cerro municipality, Havana, in the period September-October 2015 in 94 adolescents. All of them underwent a survey on the frequency of main meals, as well as weekly food consumption. The Ji-square test was used to establish associations among variables. Results: Females predominated (55.0 percent) with an average age of 12.7±0.9 years. Most of them do not meet the recommended frequency of meals and their diet is based on foods high in fat and sugar, high in sodium and low in vitamins, fibers and minerals. Females have less breakfasts (32.0 percent), males have less lunch (11.4 percent) and dinner is the food that both sexes most respect (98.0 and 97.7 percent, respectively). Cereals (64.0 percent), sugars (58.0 percent) and dairy (56.0 percent) are within the most consumed foods. Egg, cold meats and red meats are most consumed by males and white meats by females. Conclusions: Adolescents' food behavior is mostly inadequate. in its majority with greater affectation in the feminine sex at breakfast and in the masculine sex at lunch. They have a low preference for vegetables and fruits in contrast to cereals, sugars and dairy products, which are more consumed(AU)

RESUMEN Son múltiples los factores que influyen en el estado nutricional (EN) y la formación de preferencias alimentarias en preescolares, por lo cual se han propuesto intervenciones tempranas para disminuir el ambiente obesogénico. Nuestro objetivo fue analizar si aspectos alimentarios tempranos se relacionan con el EN y con algunas características alimentarias actuales en preescolares chilenos. Se realizó un estudio observacional, analítico y transversal. Participaron 61 preescolares de jardines infantiles de la Junta Nacional de Jardines Infantiles (JUNJI) de comunas de la V Región de Chile. Se determinó el EN con peso y talla, y composición corporal con impedanciómetro Bodystat 1.500, además se recopilaron antecedentes del embarazo y alimentación infantil a través de encuestas. Los análisis estadísticos se consideraron significativos con un valor de p<0,05. La lactancia materna exclusiva (LME) inferior a 6 meses se asoció con un bajo consumo de verduras en la edad preescolar (PE), además, la duración de la LME se correlacionó directamente con el consumo de verduras en preescolares. La introducción de azúcar antes de los 12 meses, se asoció con el consumo de golosinas dulces en edad PE y este con mayor porcentaje de grasa corporal, mientras que la introducción temprana de sal se asoció con mayor consumo de golosinas saladas. La introducción de azúcar previa a los 12 meses podría determinar un mayor consumo de alimentos poco saludables en preescolares. El consumo de verduras presentó asociación positiva con la duración de la LME, lo que sugiere que los patrones alimentarios en edades tempranas podrían modular las preferencias de alimentos en edades posteriores.


ABSTRACT There are multiple factors that influence nutritional status (NS). Early interventions have been proposed to reduce the obesogenic environment, including the targeting of food preferences among preschoolers. Our aim was to analyse if early dietary aspects were related to NS and some current eating features in Chilean preschool children. An observational, analytical and cross-sectional study was carried out among 61 preschoolers from the National Board of Kindergartens (JUNJI) from councils in the V Region of Chile. NS was determined with weight and height, and body composition with a Bodystat 1.500 impedance meter, in addition, background data of pregnancy and infant feeding were collected through surveys. Statistical analyses were considered significant with a p value <0.05. Exclusive breastfeeding (EBF) for less than 6 months was associated with a low consumption of vegetables in preschool (PE) age, in addition, the duration of EBF was directly correlated with the consumption of vegetables. The introduction of sugar before 12 months was associated with the consumption of sweet snacks and this with a higher percentage of body fat, while the early introduction of salt was associated with a higher consumption of savoury snacks. Introducing sugar prior to 12 months of age could lead to higher consumption of unhealthy foods in preschoolers. Consumption of vegetables showed a positive association with the duration of EBF, which suggests that eating patterns at an early age could modulate food preferences at later ages.

Objective@#To investigate the picky eating behavior among school-age children and to analyze its association with their health status, providing scientific basis for health promotion of school-age children in China.@*Methods@#A total of 796 students of grade 3 to grade 6 from two primary schools in Hongshan, Wuhan were selected through cluster sampling. Statistical analysis was conducted according to the results of the 3-day food record and questionnaire survey on children and their caregivers.@*Results@#In the current study, 40.58% of the children had picky eating problems, the incidence of picky eating behaviors of migrant children was higher than that of local children(χ2=3.92, P<0.05). Most of the picky eaters(23.87%) tended to reject vegetables. Compared to the others, picky eaters had lower intake of vitamin B 2 [(0.49±0.01)(0.46±0.01)mg] and vitamin C [(57.35±0.76)(54.32±0.90)mg] (t=2.03, 2.57, P<0.05) and had a higher risk of stunting(OR=1.42, P<0.05).@*Conclusion@#Picky eating behaviors are common among school-age children, which is significantly associated with stunting. Nutritional education for children (especially migrant children) are urgently needed to improve their dietary structure and promote healthy growth and development.

ABSTRACT Objective: To identify the factors associated with food neophobia in children through a systematic review. Data sources: This research was based on the recommendations of the Preferred Reporting Items for Systematic Reviews and Meta-Analyses. The research was carried out in the PubMed, Science Direct, and Scientific Electronic Library Online databases, with the combination of health descriptors in English and Portuguese: ("Food Neophobia" OR "Feeding Behavior" OR "Food Preferences" OR "Food Selectivity") AND Child, from 2000 to 2019. Studies that evaluated factors associated with food neophobia in children were included. The quality of the studies was assessed using the Effective Public Health Practice Project: Quality Assessment Tool for Quantitative Studies (QATQS). Data synthesis: 19 studies were included in the systematic review. The prevalence of food neophobia ranged from 12.8 to 100%. The studies used three different scales to measure the level of food neophobia. The main factors associated with food neophobia were: parental influence on children's eating habits, children's innate preference for sweet and savory flavors, influence of the sensory aspect of the food, parents' pressure for the child to eat, parents' lack of encouragement and/or affection at mealtime, childhood anxiety, and diets with low variety and low nutritional quality. Conclusions: The factors associated with food neophobia permeate several areas of the child's life, thus, interprofessional follow-up becomes essential in the intervention process.


RESUMO Objetivo: Identificar os fatores associados à neofobia alimentar em crianças por meio de uma revisão sistemática. Fontes de dados: Esta pesquisa foi baseada nas recomendações do Preferred Reporting Items for Systematic Reviews and Meta-Analyses. A busca foi realizada nas bases de dados PubMed, ScienceDirect e Scientific Electronic Library Online (SciELO), com a conjugação dos descritores em saúde em português e inglês: ("Food Neophobia" OR "Feeding Behavior" OR "Food Preferences" OR "Food Selectivity") AND Child, no período de 2000 a 2019. Foram incluídos os estudos que avaliaram os fatores associados à neofobia alimentar em crianças. A qualidade dos estudos foi mensurada por meio da ferramenta Effective Public Health Practice Project: Quality Assessment Tool for Quantitative Studies (QATQS). Síntese dos dados: Dezenove trabalhos foram incluídos na revisão sistemática. A prevalência da neofobia alimentar variou de 12,8 a 100%. Os estudos utilizaram três diferentes escalas a fim de medir o nível de neofobia alimentar. Os principais fatores associados a esse quadro foram: influência parental nos hábitos alimentares da criança, preferência inata das crianças por sabores doces e salgados, influência do aspecto sensorial do alimento, pressão dos pais para a criança comer, falta de encorajamento e/ou afetividade dos pais no momento das refeições, ansiedade na infância, dietas pouco variadas e com baixa qualidade nutricional. Conclusões: Os fatores associados à neofobia alimentar permeiam diversos âmbitos da vida da criança, assim, o acompanhamento interprofissional torna-se essencial no processo de intervenção.

ABSTRACT Objective: To investigate and compare the eating behavior and food neophobia of children and adolescents from different age groups, body mass index per age, and sex. Methods: This was a cross-sectional study, with a convenience sample, involving 150 children and adolescents aged 3 to 13 years, of both sexes, treated at a pediatric outpatient clinic of a teaching hospital in the municipality of Uberaba-MG, Brazil. Subscales of the Child Eating Behavior Questionnaire (CEBQ) were used to evaluate eating behavior, and the Child Food Neophobia Scale (CFNS) was used to evaluate food neophobia. Results: Higher scores were found in the subscales "food responsiveness" (p=0.015), "enjoyment of food" (p=0.002), and "emotional overeating" (p=0.009) among older children and adolescents. Younger children had higher scores in the subscales "satiety responsiveness" (p=0.004) and "slowness in eating" (p=0.001). There was a tendency toward higher scores for "food responsiveness" (p=0.005) and "emotional overeating" (p=0.013) in participants with severe obesity. There were no differences in the scale of food neophobia. Overall, food neophobia positively correlated with lack of interest in food and negatively correlated with interest in food. Conclusions: The study showed significant differences in some domains of eating behavior among children and adolescents of the sample; however, no differences were found regarding food neophobia. These results may contribute to the improvement of future interventions related to infant eating behavior and food neophobia.


RESUMO Objetivo: Investigar e comparar o comportamento e a neofobia alimentares de crianças e adolescentes de diferentes faixas etárias, índice de massa corporal/idade e sexo. Métodos: Tratou-se de um estudo transversal, com amostra por conveniência, envolvendo 150 crianças e adolescentes com faixa etária entre 3 e 13 anos, de ambos os sexos, atendidas em um ambulatório pediátrico de um hospital escola em Uberaba, MG. Para avaliar o comportamento alimentar, utilizaram-se as subescalas do Child Eating Behaviour Questionnaire (CEBQ) e para a neofobia alimentar o Child Food Neophobia Scale (CFNS). Resultados: Verificaram-se pontuações mais altas nas subescalas "resposta à comida" (p=0,015), "prazer em comer" (p=0,002) e "sobreingestão emocional" (p=0,009) em crianças e adolescentes com idades maiores. As crianças com idades menores obtiveram pontuações mais altas nas subescalas como "resposta à saciedade" (p=0,004) e "ingestão lenta" (p=0,001). Observou-se uma tendência à maior pontuação quanto à "resposta à comida" (p=0,005) e à "sobreingestão emocional" (p=0,013) nos participantes com obesidade grave. Não houve diferenças quanto à escala de neofobia alimentar. De modo geral, a neofobia alimentar correlacionou-se positivamente com o desinteresse pela comida e negativamente com o interesse pela comida. Conclusões: O estudo indicou diferenças significantes em alguns domínios do comportamento alimentar entre as crianças e os adolescentes da amostra, porém não houve diferenças em relação à neofobia alimentar. Nesse sentido, esses resultados podem contribuir para o aprimoramento de intervenções futuras referentes ao comportamento e à neofobia alimentares infantis.

ABSTRACT OBJECTIVE To estimate the lowest cost of a healthy and culturally acceptable diet and to assess the evolution of its cost in the periods 2008-2009 and 2017-2018. METHODS We used data on the individual food consumption and food prices from the Pesquisas de Orçamentos Familiares (Household Budget Surveys), in the 2008-2009 and 2017-2018. The sample strata of each period were aggregated, forming 108 new strata with geographic and economic homogeneity. Linear programming models generated diets for each new stratum, considering the constraints in two models: model 1 (≥ 400g of fruits and vegetables); and model 2 (≥ 400g of fruits and vegetables, < 2300mg of sodium, sodium/potassium ratio < 1, ≥ 500mg of calcium). Each food could progressively deviate 5g from the observed consumption averages until the models found a solution in each of the strata. The objective function was to minimize the total cost of the diet. RESULTS The average observed and optimized costs were R$4.96, R$4.62 (model 1) and R$5.08 (model 2) in 2008-2009, and R$9.18, R$8.69 and R$9.87 in 2017-2018. Models 1 and 2 resulted in an increase of up to 6% and 11% in 2008-2009, and of up to 25% and 34% in 2017-2018 in the lowest income strata. The main changes observed in the two models include the reduction in the amounts of sweetened beverages, sweets, sauces, ready-to-eat foods, and an increase in fruits and vegetables, flour, and tubers. CONCLUSION The adequate amount of fruits and vegetables resulted in an increase in costs to some population strata. When the adequacy of calcium, sodium, and potassium was considered, we observed a more significant increase in cost, especially in 2017-2018.


RESUMO OBJETIVO Estimar o menor custo de uma alimentação saudável e culturalmente aceitável e avaliar a evolução de seu custo nos períodos de 2008-2009 e 2017-2018. MÉTODOS Foram utilizados dados de consumo individual dos módulos de consumo alimentar das Pesquisas de Orçamentos Familiares de 2008-2009 e 2017-2018. Os preços dos alimentos foram obtidos do módulo de caderneta de despesa das respectivas pesquisas. Os estratos amostrais de cada período foram reagrupados, formando 108 novos estratos com homogeneidade geográfica e econômica. Modelos de programação linear foram elaborados para gerar dietas para cada novo estrato, considerando as restrições do modelo 1 (≥ 400g de frutas e hortaliças) e modelo 2 (≥ 400g de frutas e hortaliças, < 2300mg de sódio, relação sódio/potássio < 1, ≥ 500mg de cálcio). Cada alimento das dietas observadas poderia desviar progressivamente em 5g a partir das médias de consumo observadas até que os modelos encontrassem uma solução em cada um dos estratos. A função objetivo foi de minimizar o custo total da dieta. RESULTADOS Os custos médios observados e otimizados foram de R$4,96, R$4,62 (modelo 1) e R$5,08 (modelo 2) em 2008-2009 e de R$9,18, R$8,69 e R$9,87 em 2017 -2018. Nos modelos 1 e 2 ocorreram incrementos de até 6% e 11% em 2008-2009 e de até 25% e 34% em 2017-2018 na menor faixa de renda. As principais modificações observadas nos dois modelos incluem a redução nas quantidades de bebidas adoçadas, doces, molhos, alimentos prontos para consumo e aumento de frutas e hortaliças, farinhas e tubérculos. CONCLUSÃO A adequação da quantidade de frutas e hortaliças acarretou aumento no custo para parte da população. Quando a adequação de cálcio, sódio e potássio foram consideradas, ocorreu um aumento mais expressivo no custo, especialmente em 2017-2018.

ABSTRACT

El deterioro de la calidad de la dieta está afectando la salud de los niños menores de dos años. Por tal motivo, es de vital importancia la identificación de factores relacionados con el desarrollo y establecimiento de preferencias alimentarias en etapas tempranas de la vida y brindar recomendaciones que faciliten su adopción. Esta revisión sistemática de la literatura tiene como objetivo resumir la evidencia existente sobre los factores asociados a formar y modelar las preferencias alimentarias en etapas tempranas de la vida. Para esto se realizó una búsqueda en PubMed de estudios que evaluaran la asociación entre la exposición prenatal y posnatal de sabores, introducción temprana de alimentos y habituación al sabor dulce, alimentación complementaria y diversidad dietética. Se incluyeron artículos publicados desde el 2000 hasta el 2019. Resultados de 39 artículos sugieren que la alimentación durante los primeros dos años de vida y el desarrollo de preferencias alimentarias en etapas tempranas de la vida tiene el potencial de modificar los patrones de alimentación y establecerse en etapas posteriores de la vida, por lo que, los primeros mil días de vida constituyen una ventana de oportunidad para formar preferencias alimentarias saludables y mejorar la calidad de dieta de los niños(AU)


Poor diets are damaging children's health. Therefore, it is urgent to identify factors related to the development and establishment of healthy food preferences early in life and to provide recommendations to enable their adoption. This systematic literature review aims to summarize the existing evidence on the factors identified on shaping food preferences early in life. For this, a search was conducted on PubMed about studies evaluating the association between prenatal and postnatal exposure of flavors and the development of food preferences, early food introduction, innate preference to sweet taste, complementary feeding and dietary diversity with the development of food preferences. Articles published from 2000 to 2019 were included. Results from 39 manuscripts suggest that the first 2 years of life are critical for the development of food preferences early in life. These food preferences have the potential to modify children's eating patterns and persist later in life. Therefore, the first 1000 days of life are a key window of opportunity to establish healthy food preferences and shape the quality of children's diet(AU)

Introdução: obesidade é um problema de saúde pública e está relacionada com fatores genéticos, ambientais e comportamento alimentar. É uma doença de difícil controle e a cirurgia bariátrica tem surgido com uma terapêutica de sucesso para obesos graves. Objetivo: descrever o comportamento e preferências alimentares de pacientes obesos encaminhados à cirurgia bariátrica. Metodologia: estudo descritivo baseado em dados secundários de uma clínica especializada no tratamento da obesidade. Foram estudadas variáveis antropométricas, sociodemográficas e outras referentes ao comportamento e preferências alimentares. Para análise dos dados foram utilizados: estatística descritiva e qui-quadrado de Pearson, sendo considerados significantes valores de p<0,05. Resultados: foram avaliados 542 pacientes com média (desvio padrão) de idade e índice de massa corporal de 35,9 (9,8) anos e 41,5 (4,9) kg/m2 respectivamente, sendo 73,6% do sexo feminino. Observou-se que os pacientes tinham preferência por cereais e massas (62,4%), seguido de carne e ovos (58,1%). Destacou-se que adultos jovens realizavam menos o desjejum (65,1% x 75,4%; p= 0,011) e ingeriam maior volume de alimentos nas refeições (90,7% x 81,1%; p=0,007) quando comparados aos mais velhos e que o comportamento de acordar para comer à noite foi mais frequente nos homens do que nas mulheres (31,2% x 21,6%; p=0,029). Conclusão: o estudo mostrou que os grupos alimentares preferidos foram os cereais e massas seguidos de carne e ovos. Quanto ao comportamento alimentar foi observado influência do sexo e da idade dos indivíduos, o mesmo não acontecendo em relação ao grau de obesidade.


Introduction: obesity is a public health problem related to genetic, environmental and eating behaviour factors. It is difficult to control, and bariatric surgery has emerged as a successful treatment for the severely obese. Objective: to describe the behaviour and food preferences of obese patients referred to bariatric surgery. Methodology: descriptive study based on secondary data from a clinic specialized in the treatment of obesity. Anthropometric, sociodemographic and other variables related to behavioural and food preferences were studied. For data analysis, descriptive statistics and Pearson's chi-square were used, with p <0.05 being considered significant. Results: 542 patients with mean age (standard deviation) and body mass index of 35.9 (9.8) years and 41.5 (4.9) kg / m2 respectively were evaluated, 73.6% of which were female. It was observed that the patients preferred to eat cereals and pasta (62.4%), followed by meat and eggs (58.1%). It was highlighted that young adults had less breakfast (65.1% x 75.4%; p = 0.011) and ingested a greater volume of food at meals (90.7% x 81.1%; p = 0.007) when compared to older people and that the behaviour of waking up to eat at night was more frequent in men than in women (31.2% x 21.6%; p = 0.029). Conclusion: the study showed that the preferred food groups were cereals and pasta followed by meat and eggs. As for eating behaviour, the influence of the individuals' sex and age was observed, the same not happening in relation to the degree of obesity.

Objetivo: Conhecer os determinantes das escolhas alimentares entre as beneficiárias do Programa Bolsa Família em um município do interior da Bahia. Métodos: Trata-se de estudo transversal, com abordagem quantitativa, realizado com mulheres adultas titulares do Programa. Foram realizadas entrevistas para a aplicação do questionário de marcadores de consumo alimentar, da ficha de cadastro e acompanhamento nutricional do Sistema de Vigilância Alimentar e Nutricional, e do questionário sobre motivo das escolhas alimentares. Resultados: : Foram avaliadas 40 mulheres, todas consideradas de baixa renda, pretas e pardas (90%), com idade entre 20 e 39 anos (57,5%) e escolaridade superior a quatro anos de estudos (62,5%). Observaram-se maior consumo de feijão, frutas e bebidas adoçadas, e baixa ingestão de verduras e alimentos ultraprocessados. Os motivos das escolhas alimentares com maior grau de importância foram o apelo sensorial, a saúde e o preço dos alimentos; aqueles com menor relevância foram conveniência e humor. Conclusão: Um conjunto de determinantes é responsável pelas escolhas alimentares: alguns relacionados ao alimento, outros vinculados ao indivíduo e aqueles ainda referentes aos aspectos sociais, culturais, éticos, entre outros. Assim, conhecer os principais determinantes torna-se essencial para a compreensão do consumo alimentar das beneficiárias do Bolsa Família e as repercussões sobre o estado nutricional, auxiliando nutricionistas, demais profissionais de saúde e gestores públicos na adoção de estratégias que promovam a Segurança Alimentar e Nutricional das famílias de baixa renda. Objective: To know the determinants of food choices among the beneficiaries of the Bolsa Família Program in a city in the State of Bahia. Methods: This is a crosssectional study with a quantitative approach, conducted with adult women who were beneficiaries of the Program. Interviews were conducted by the application of dietary intake markers questionnaire, the registration form, and the nutritional monitoring of Food and Nutrition Surveillance System, and the questionnaire exploring the reason for food choices. Results: fourty women participated in the study, all of them were considered to be low income, 90% were black and brown 57.5% aged 20 to 39 years old, and 62.5% had more than four years of education. Higher consumption of beans, fruits and sweetened beverages and low intake of vegetables and ultraprocessed foods were observed. The most important food choices reasons were sensory appeal, health and food prices; the least relevant were convenience and mood.Conclusion: A set of determinants is responsible for food choices: some related to food, others are individual-related, and still are related to social, cultural, and ethical factors, among others. Hence, it is fundamental to know the main determinants in order to understand the food consumption of Bolsa Família beneficiaries and the impacts on nutritional status, helping nutritionists, health professionals, and public managers when it comes to adopting strategies that promote Food and Nutrition Security of low income families.
